Citrus Sesame Kale Salad [recipe]

I love me a good salad on a warm Summer night, although I’ve gotten pretty tired of the basic spring mix and balsamic salad I make constantly.  One leafy green I always seem to forget about is kale.  Kale has so many health benefits, and kale salads are so simple to make! The other night Brett and I made a nice and light pasta dinner, so I threw together this simple kale salad to go along with it.

Citrus Kale Salad [recipe]

INGREDIENTS

  • 1 small bunch of dinosaur kale, chopped
  • 1/2 tsp kosher salt
  • 1/4 cup balsamic vinegar
  • 2 tbsp Dijon mustard
  • 3 tbsp orange juice
  • 2 tsp agave nectar
  • 2 tbsp sesame seeds
  • 1/2 cup mandarin orange slices (optional)

METHOD

Place chopped kale in a medium serving bowl, sprinkle with salt, then lightly toss and “massage” kale with the salt for about a minute.  This helps to tenderize the leaves, making them less bitter.  Set aside.

In a small bowl, whisk together balsamic vinegar, Dijon mustard, orange juice and agave nectar.  Pour dressing over kale just before serving, you may have extra dressing depending on how much you like on your salad.  Top salad with sesame seeds and mandarin orange slices.
