The Skinny BBQ Chicken Pizza {Recipe}

Who doesn’t love pizza?  But it’s no secret that it’s not exactly “healthy” for you, so we tend to eat it in moderation, sometimes feeling guilty after we overindulge, sigh…but wait!  Could it be possible?  A pizza recipe that’s delicious and actually good for you?!  Yes.  I’ve found one, and I’m so excited to share it!  I may be a bit behind the times in my finding and I don’t know how I missed it before, but it turns out that you can make an amazing pizza crust using a totally unexpected ingredient, cauliflower!  Once you make this crust, you can top it with anything of course, but I chose to top mine with one of my favorite pizza toppings, BBQ Chicken and onion.  Introducing, The Skinny BBQ Chicken Pizza on cauliflower crust!

The Skinny Barbeque Chicken Pizza Recipe

Gather Up:

1 cup ground cauliflower

1 cup corn meal

2 eggs, beaten

1 teaspoon dried oregano

½ teaspoon crushed garlic

½ teaspoon garlic salt

One chicken breast (grilled with BBQ sauce and diced)

One red onion (cut into thin strips)

¼ cup BBQ sauce

½ cup shredded mozzarella cheese

3 T chopped scallion

Intructions:

For the cauliflower crust:

Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.

In a food processor, grate the chopped cauliflower until it reaches a grain-like texture.  Don’t over process. This will make approx. 3 cups of ground cauliflower, this recipe only calls for one so you can save the rest for more crusts!

Using In a medium bowl, stir together 1 cup of ground cauliflower, egg and corn meal.  Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a desired pizza shape. Optional: Brush olive oil over top of mixture to help with browning.

Bake at 450 degrees for 15 minutes.

For the Barbeque Chicken Topping:

Prepare one chicken breast grilled with BBQ sauce.  Baste the chicken with BBQ sauce and grill for approx. 15 minutes until slightly blackened.  Cut into cubes.

Spread ¼ cup BBQ sauce on the cooked pizza crust.  Layer the chicken, then the onion, last sprinkle ½ cup mozzarella cheese.

Bake at 450 degrees for 10-15 minutes until cheese bubbles.

Sprinkle 3 T chopped scallion on top of the cooked pizza for a finishing touch.
