Peanut Butter, Banana + Pretzel Cookies [skinny recipe]

I’m not sure what it is, but there’s just something about the sweet + salty combination that gets me every time.  I’m a sucker for chocolate covered pretzels, salted caramel, and just about any other dessert with that sweet & savory allure.

In the past, I’ve shared some of my favorite peanut butter & banana cookies, like the Dirty Monkey Cookies and the Guilt Free Peanut Butter Cookies, which I make constantly…but last week I felt the need to spice things up a bit, or shall I say “salty” things up a bit!  Sorry, I couldn’t resist.  I ended up creating a cookie that contains everything that’s good in this World, peanut butter, bananas, oats, and pretzels…and the best part is that you shouldn’t feel guilty after eating this not-so-sweet treat; these cookies have very little sugar and mostly all natural ingredients, so they’re even perfect for a breakfast on the go!

Here they are, my Peanut Butter, Banana + Pretzel Cookies…

PEANUT BUTTER + BANANA + PRETZEL COOKIES [recipe]

INGREDIENTS

1/2 cup flour

1/4 tsp baking powder

1/4 tsp salt

1/4 cup peanut butter

1 mashed banana

1/4 cup brown sugar

4 TBSP sugar

1/2 tsp vanilla

3/4 cup quick oats

1/2 cup pretzels, broken into tiny pieces

METHOD

Preheat oven to 400 degrees.  Mix flour, baking powder and salt together in a medium sized bowl, set aside.

In a large mixing bowl, blend peanut butter, banana, brown sugar, white sugar and vanilla, mix well.

Add flour mixture to wet mixture, blend well.

Finally, blend quick oats and pretzels into your mix.

Spoon tablespoon sized balls of cookie mixture onto cookie sheet, bake for 8-10 minutes until the tops are golden brown.
