Big Changes + Simple Chicken Chow Mein [recipe]

2014 has brought about lots of exciting changes and new developments!  You already know about our new site design, which super exciting. So the real big change is that, after 7 years I’ve resigned from my full time job (in the corporate World) so that I can dedicate all of my time to creating & sharing DIY inspiration with you all here on Picklee!  Leaving my comfy full time job was a scary decision, but absolutely the right decision.

The Picklee blog started out two years ago as my creative outlet, and it quickly became an extension of me, everything that I love.  Luckily, so many of you happen to love the same things!  Okay, enough mushy stuff… this big change means I’ll have much more time to bring you more of the things you love, more DIY projects, furniture flips, home improvement projects (our new home requires many!), inspiration and of course yummy recipes!  Speaking of yummy recipes, today I’m sharing a super Simple Chicken Chow Mein recipe made with ramen noodles.  I know the thought of ramen noodles spark an instant college flash back, but this amazing chow mein recipe taste nothing like the 10 cent bowl of soup we use to slurp in our younger years, I promise.

Simple Chicken Chow Mein
apadpted from Budget Bytes, recipe serves 3-4

INGREDIENTS

2 (3 oz.) packages ramen noodles, seasoning packets discarded
1 medium yellow onion
2 medium carrots
1 crown broccoli
1/2 cup sugar snap peas
2 large chicken breasts, cut into small strips
1 clove of garlic, chopped
2 tbsp. olive oil
1 tsp sesame oil
¼ cup soy sauce
3 tbsp  worcestershire sauce
2 Tbsp ketchup
1 Tbsp sriracha hot sauce, use less if you prefer a more mild dish!
1 Tbsp sugar

METHOD

Add 1 tbsp. olive oil and chopped garlic to a large skillet, bring to medium heat. Add chicken to skillet and sauté on medium heat.

While chicken is cooking, prepare ramen noodles according to package instructions (do not use seasoning packets).  Remove noodles from the heat when thy are slightly undercooked, strain and set aside.

Once chicken is lightly browned, remove from skillet and set aside.

In the same large skillet, bring the remaining 1 tbsp. of olive oil to medium heat.  Add all vegetables to skillet.

While vegetables are cooking, quickly mix up the chow mein sauce.  In a medium bowl, combine sesame oil, soy sauce, Worchester sauce, ketchup, sriracha and sugar.

After vegetables are lightly browned (about 5 minutes), add chicken and ramen noodles to the skillet, then pour chow mein sauce over the mixture.  Sauté chow mein for 1-2 minutes, stirring constantly.

Remove from heat an serve!

  3. Never have been able to make good Chinese dishes and was iffy on this one!! So glad I tried it! Easy and Delish! My 9 year old son drowns his chow mein in soy sauce and this recipe was so tasty he never asked for it! I will defiantly make this again!!!!
